History of Kacchi

The origin of Kacchi lies in the Mughal kitchen. In the 16th–17th century, the Mughals introduced this unique cooking method. This biryani style came with the Mughals and gradually spread. Eventually, it became a popular dish among the Bengali Muslim community. In fact, for the Muslim aristocrats, this special and delicious item became a must during festivals and weddings.

Why is it called Kacchi?

Unlike other biryanis, in Kacchi, the meat is not pre-cooked. Rather, raw marinated meat is layered with partially cooked rice and then slow-cooked together. This method gave it the name Kacchi (meaning “raw”). Special spices are used in the marination, and the dish is then cooked using the traditional dum (slow steam) method. Fried onions, potatoes, and boiled eggs are often added to enhance flavor. Due to its taste, Kacchi has become one of the most beloved dishes.

How is it prepared?

Kacchi biryani is made with two main ingredients: raw marinated meat (usually mutton) and partially boiled rice (usually Basmati). Marinated meat is layered at the bottom of the pot. Then parboiled rice is layered over it, followed by fried onions, potatoes, and sometimes eggs.

Ghee (clarified butter) is poured over the layers. The pot is then sealed and cooked on low heat for a long time using the dum method. Before serving, the layers are gently mixed to spread the aroma and flavor.

Made with aromatic Chinigura rice, tender mutton, and a perfect blend of spices. This mouth-watering dish is one of my personal favorites . But they’re portion of mutton is getting lower then before and many bad reviews about the portion of meat is spreading to the internet.
